One clarification to your first point. Since the flexible volumes are newly created, you have to initialize any snapmirrors between them. If you leave you data in traditional volumes, you do not need to reinitialize the snapmirror transfer.

If you use volume snapmirrors, you'll need to re-initialize them when you go to 7G from 6.5.
If you aren't upgrading everything at the same time, be sure to update the destinations of the snapmirrors before the sources.
If you use qtree snapmirrors, they interoperate OK.
