NetApp backups never use the .snapshot directories unless you specifically name them as the backup path. But the act of doing a NDMP backup on NetApp will ALWAYS generate a new snapshot that is used to do the backup.
You cannot use wildcards to do NDMP backups. You can use /vol/vol0 or / which is an alias for /vol/vol0 on NetApp.
NDMP protocol does not specify any mechanism for doing excludes. NetApp has a proprietary mechanism by setting the NDMP environment variable EXCLUDE. See NetApp documentation for exact syntax. I believe the syntax of your class file list should be something like this:
SET EXCLUDE=*.txt /vol/vol0
