We have a test machine with a bunch of disk space on it.
Not enough, and NetApp disk space isn't cheap :-)
Is there any easy way in which we can turn off RAID and free up that disk for real data? Ideally without losing all the data that's on there at present...

Easy answer. No. If you don't want RAID don't buy a NetApp. There are many JBODs out there that will sell you disk space cheep. Please note that you get what you pay for in life.
