You don't defragment filers.
WAFL as a file system is designed to minimize fragmentation from the get-go. That's where NVRAM comes in, and the 10% of the file system that's reserved for WAFL to use to optimize things. And because of the way WAFL works, when you do have fragmentation, you don't see much of an impact on performance.
If you're really determined to defragment your filer, back it up, erase it, and restore.
