In your question, you didn't specify NFS or CIFS. Since I am *much* more comfortable with NFS, I wrote my answer in those terms, and hand waved outside of my comfort zone.
In the case of windows, you are correct - you should use UNC paths. You'll also have to tell DFM the name of a CIFS account/password that can be used by the host agent to access the shares. This can be done on a per host agent basis from the Edit Agent Logins page (SRM tab -> Edit Agent Logins) or using a global default (go to the DFM options page, look under Host Agent Options, and configure the Host Agent CIFS Account and the Host Agent CIFS Password).
If this doesn't help you, I would recommend that you work through your normal support channel, so that you can get feedback from folks that are more familiar with this specific DFM feature.

This is what I haven't understood so far, even after reading the documentation. How do I "mount" a CIFS share on the windows system running the agent? Do you mean "map a network drive"? But for that a user needs to be logged in, correct?. Can we use an UNC path? We have a FAS 960 with 148 shares (Qtrees). Do I have to map each of them individually? -G

To get SRM information from DFM about files kept on a filer, you put the host agent on a system that is mounting the filesystem(s) from the filer that you are interested in (do the corresponding thing for the CIFS share case).

I haven't had any problems with doing this. I've done it two or three different times. The only thing that I had problems with is the SRM data. I had to delete my paths and re-add them once I was running on the new system. The database was crashing while I was walking a device tree so I deleted the SRM path and re-entered it. I haven't had any problems since then.

Question on installing DFM 3.0. We have a current working install of DFM on "server A". Just built a new "server B" and installed DFM 3.0. We want to preserve and use the db from serverA on serverB. How do we accomplish this? Just run the dfm backup create (on serverA); then run the dfm backup restore (on serverB). Is that it? Anyone have experience with this?
