Raid-DP has been stable for a while. But you need to have enough spare disks so you can add a second parity disk to each of your raid groups on your F840s. Do:

rsh <filer> vol status -r

and count the number of raid groups you have, then see if you have enough spare disks to convert each volume (and it's one or more raid groups) to Raid_DP.
