We use Xinet's (http://www.xinet.com) KA-Share product to do exactly the same thing (i.e. mount an NFS file system and re-export it as AppleShare). I also did this at a previous job. Works very well.
What's nice about the AppleShare re-exporting model (as opposed to putting CIFS or NFS on the Mac) is that there is nothing to install on the Macs -- they work natively with AppleShare, so you can put a brand-new, out-of-the-box Mac on your network and start downloading it immediately.
I believe KA-Share runs on Sun, SGI, and HP. We use it on SGI.
