This is certainly possible with VxVM 3.2 for Unix, where you have additional objects to maintain metadata about where an off-split mirror differs from the on-line mirror. This represents yet another license to buy.
Without such a fast resync option, the whole mirror does need to be resilvered, and that does get painful.
I'd imagine other volume managers may have similar functionality.
