You might want to pick up the latest Linux NFS client patches. I had problems (with both stability and performance) with the NFS client support that came bundled in with 2.2.12, but both stability and performance have improved greatly after picking up the patches. The patches include NFSv3 support as well.
The latest patches only apply to 2.2.14. You'll have to do some significant merging if you want to stick with older releases.
Look in nfs.sourceforge.net, or talk to the VA Linux folks.
We've been using NFSv3/UDP+32K xfer sizes on a farm of Linux 2.2.13 clients with several F740's for a couple of months now with no problems.
