Is there an alternative method to shutting off snapshots? (i.e a snapshot off command, or something like that)

It's a bit unclear what you claim to have done, but if it's
snap reserve VOLNAME 0 snap sched VOLNAME 0
then that's all you need to do, and it will persist indefinitely until you change it. Pretty simple - why would you want an "alternative method" ?
You could use "vol options VOLNAME nosnap on" instead of the "snap sched", but I tend to think of the nosnap option as being useful as a temporary override rather than a permanent setting.
Don't forget to delete any snapshots taken before you turned them off.
