I have a volume called vol0 which shows 254gb of space. I believe it has 7 data disks (34.5gb) and 1 parity disk in raid group 0. There is also a raid group 1 that contains a 1 data disk and 1 parity disk. I don't think these disks are being used in the volume vol0.
It's shown as part of vol0, so why do you think it isn't?
How do I tell if they are or aren't? If they aren't being used how can I get them added into vol0 as 2 data disks?

That all looks perfectly consistent to me. There are two RAID groups (8 and 2 discs: unbalanced, but that's what happens if you let things default). There are 7+1 = 8 data discs, each with 34500 MB usable. 20.5 MB gets snipped off each of them for boot/dump areas, leaving
8 * (34500 - 20.5) MB = 282456064 KB
and 90% of that (rounded up) is 254210460 KB which is what "df" is showing you as the filing system size.
