I know its only just GA but 8.2 7-mode has automatic resizing of snapmirror destinations:
From 8.2 7-mode release notes:
"Starting with Data ONTAP 8.2, if you increase the size of a SnapMirror source FlexVol volume and perform a SnapMirror transfer, the size of the SnapMirror destination FlexVol volume automatically increases to that of the SnapMirror source FlexVol volume."
