OK, first hurdle! The current vol0 is only 16Gb and running 7.2.6.1. Should I create a new "vol0" (can I even do that?) or just extend the existing one? I think I can do the upgrade to 7.3.6 - that's one thing I have done before :)
Every volume must have its own unique name. Whilst it is possible to create new root volume I would advise against this as you would lose a lot of your configs in the process. I would simply resize the existing root volume (vol0) to the desired size.

So if the 3240 boots from CF and picks up the config from vol0, do I need to have ONTAP 8 installed on vol0 as well?
The short answer is no. ONTAP8 can read and upgrade ONTAP7 aggregates, so it will be able to pick up the configs from vol0 and will start off by upgrading all your aggregates and volumes to the new wafl format.

One thing you may need to do is update your zoning if you are using soft (WWNN) zoning.
