I see no problem with doing it in all one volume. You won't have any preformance limitations. You do not even have to use qtrees if you don't want to, just different directories. But the qtrees help if you want to quota them to restrict space usage as if they were partitions.
As to removing a qtree it's really easy; you just delete it like any directory.
