Actually, the only NFS service that involves passwords is PCNFSD.
And these passwords are encrypted, marginally, so an average sniffer won't see it (they are usually looking for password in unecrypted telnet/rlogin sessions) and would have to be coded to specifically look for and recover these passwords.
