I reformatted a NetApp shelf of 520bps disks to 512bps with
# scsictl /dev/rsd0 format 512 immediate
(and rsd1 and rsd2 and...,under NetBSD)
used the disks for something, then did
scsictl /dev/rsd0 format 520 immediate
and the filer (an old F85 iirc) was happy with them.
I suppose, as long as your filer is not under support, you could try to reformat the disks, but you still may struggle with getting ONTAP to accept them. I've never tried to make it happen, but I can't say it's impossible. And, of course, never do this on a system that has a valid support contract.
