Oh so it means in 7.0.0.1 the behaviour is different from how it is in 6.5.3. We are running 6.5.3P4 and have that option turned off and STILL users with Windows Shadow Copy Client can see the previous versions of their files and folders. We deliberately turned off showing the snapshots on CIFS because our users were confused about it (most of them have "show hidden files" option turned on). We installed the shadow copy client on their machines to help them do the restores themselves without the hassle of them "seeing" multiple copies of the same files when they do a search or browse through their shares and folders. The Shadow copy client was perfect for our needs - no ~snapshot folders visible, yet users can restore previous versions by themselves.
NOTE: Even with show_snapshot set to off in 6.5.3, one can go into the snapshot folders by manually typing in the path, e.g: \<filername><share_name><dir_name>~snapshot\ either in the Run command box or widnows explorer. This would show the traditional snapshot folders.
One more reason for us to stay away from 7.0.0.1 for now. Hope NetApp reverts the behaviour back to how it was in 6.5 and earlier versions. Would they consider this as a bug ?

Jourdan Bailey of NetApp found the solution that resolved the problem and allowed us to use the Win Shadow Copy client: options cifs.show_snapshot on
