We use Xinet's (http://www.xinet.com) KA-Share product to do exactly the same thing (i.e. mount an NFS file system and re-export it as AppleShare). I also did this at a previous job. Works very well.
We used to use something similar many years ago called uShare from Information Presentation Technologies. Don't know if they are still around or if they got bought out. As per your experience, it worked well. Resource forks were stored is a special dot directory.
