Just a note: thank you all for your responses and the dialog so far. Very educational. The stuff about distributing the load over multiple NFS points, in particular, I think is one of those valuable little tidbits that you can't find out except by talking to people with practical experience.
I feel much more comfortable with the concept, knowing that numerous others whom I can speak with are doing this.
